Game Day Wing Sauce!!

One of the best parts of Superbowl Sunday is all the great food!  Wings are one of my favorite go to game day snacks.  This is my fiance's awesome chicken wing sauce recipe.  We've been together for more than seven years now, and this recipe has been in the works for several of those years.  It uses Franks Red Hot sauce as a base, and is an awesome blend of spicy and sweet!  It goes great with other game day classics, and is on our menu for our Superbowl get together!  We generally buy a 5 pound bagof fresh (not frozen) wings, cut them ourselves and bake them to save calories.  However, the sauce is great over fried wings as well!

Ingredients:

1 12-oz bottle Frank's Buffalo Sauce
1/4 stick butter
1/4 cup brown sugar
1 tsp cayenne pepper
Curry Powder to taste/smell

Directions: 
Heat the Frank's in a sauce pan until hot.  Add butter and let melt.  Add the rest of the ingredients and let simmer/reduce for two or three minutes.  Transfer sauce to Tupperware dish and add 10 wings.  Put lid on and shake vigorously.  Remove wings and repeat until all wings are coated...  In the words of my fiance:  "Enjoy with beer and slasher flick."

Crockpot Chicken Chili

So last night, I wanted to venture out and try something new.  I have made chili in the crockpot before and it didn't turn out well.  I decided to give chili another shot, and I am so glad that I did!  I served this over brown rice, although next time I will just serve it as is.  It is fairly healthy ( a little high in sodium from the canned beans) but tastes like you have been stirring it for hours and hours on the stove.  Instead... you have a great meal literally thrown together in about five minutes in the morning!

Ingredients:

2 jalapeno peppers (chopped fine) with seeds
1 medium white onion diced
1 15 oz can red kidney beans (drained and rinsed)
1 15 oz can black beans (drained and rinsed)
1 10 oz bag frozen extra sweet corn
3 10 oz can Extra spicy RoTel (this can be substituted to mild or medium for taste)
1 8 oz can tomato sauce (I use no salt added to cut back on sodium intake)
1 packet taco seasoning (I used hot, but again can be substituted for another variety)
1 1/2 tablespoon chili powder
1 1/2 tablespoon cumin
1 tablespoon garlic powder
3 medium sized chicken breasts
Cheddar cheese or sour cream for garnish


Chop your onion and jalapenos.  Add all ingredients to crock pot except for chicken.  Stir to mix ingredients.  Add chicken to top of mixture.  Cook on low for 10 hours or on high for 6 hours.


About two hours in, I covered the chicken with the rest of the chili, and cooked it that way for the remaining 4 hours.  Remove the chicken 30-60 minutes prior to serving and shred with forks.  Put the chicken back into the crockpot and let the flavors mix another 30 minutes to an hour. 
This chili came out with amazing flavor!  The sweetness from the corn added a nice contrast to the heat from the jalapenos, RoTel, chili powder and taco seasoning.  I accidentally picked out the extra sweet corn, but am very glad I did, and highly recommend it!  I hope you enjoy this recipe.  It  will be making it's way into our favorites rotation!

Projects in the works...

My other projects this week included closet organization... Needless to say, my closet is still almost as messy as it was day one. We are in the process of deciding if we are moving or staying in our current home. Honestly, this will change my organization strategy slightly, as our current closet is set up differently than most closets I have seen. I have purged two bags full of clothes for Goodwill, so I am least making some headway in that direction.

My bows for Zoey have been made. I will be posting the super simple tutorial tomorrow if possible. I chose to make the simplest bows possible, and from start to finish, it took me all of five minutes each for bows that turned out pretty cute in my opinion.

This week, I am making Zoey a "First Superbowl" onesie. I haven't quite figured out the design I'm looking for, but I'm hoping to get inspired at the craft store tomorrow. We are not really football fans, but I want Zoey to look the part at our Superbowl party! Photos and a step by step tutorial to follow!

Our gameday appetizer of choice are my fiance's awesome chicken wings! I will post a recipe before gameday and hopefully post a pictoral on game day! I love these wings! They make a great addition to any party! They are a good blend of sweet and spicy!

Also on our menu this week is a new recipe I found for crockpot chicken chili. I'm looking forward to trying this one out. I've changed this recipe around a lot, so I hope it's good! I am always on the lookout for quick and easy crockpot recipes! As a mom, I am finding that I use my crockpot so much more than I have in the past. So, please keep checking back!

Spicy Tilapia Over Brown Rice

I am in love with spicy food!  Since becoming pregnant, I have loved spicy foods.  They just don't seem to hit me like they once did.  Zoey is seven months old, and my love of spicy food has remained.  I stumbled across the base of this recipe a while back when looking for a healthy fish recipe to serve over brown rice.  I am not a fan of following recipes to the letter, so I added and subtracted about half the ingredients until I came out with this final recipe.  I generally serve this over brown rice, but it would easily be just as great over white rice, or as a main dish with veggies and mashed potatoes.

Ingredients:



6 small tilapia filets:  (While I prefer fresh, our budget generally only allows for frozen filets)
1 teaspoon garlic powder
1 teaspoon basil
1/2 teaspoon oregano
1/2 teaspoon cumin
1 teaspoon cayenne pepper (or more or less to taste)
2 teaspoons chili powder
1/2 teaspoon ground black pepper
1/2 teaspoon curry powder
2 tablespoons butter
2 limes

Directions:  (We have a gas oven, which generally seems to cook a bit faster than most of the ovens I have worked with before, so cooking times may vary slightly).

Preheat your oven to 350 degrees.  I like to use glass pans generally, and I spray a tiny bit of non stick spray into the bottom. 

Add all spices together to form your rub.  I also zest one of the limes to add just a hint of citrus flavor to the rub itself. 



In a separate bowl, melt your two tablespoons of butter and juice from both limes.




Baste your tilapia fillets with the lime juice and butter mixture.  One very important thing to remember with fillets is that to achieve even cooking, the filets need to be the same thickness.  Often with frozen fillets, I have found that the edges tend to be very thin.  I overlap them in the pan so that they are much closer to the thickness of the middle of the fillet.  This seems to work well in creating a more uniform cooked fillet.


Next, rub the filets with the spice blend you have created. I tend to use a majority of the seasoning, but, it is up to you.  As I served this dish over brown rice, I liked the extra flavor added from more seasoning.   


Lastly, bake in the oven for 20 minutes.  Fish is done when it is flaky and breaks apart easily with a fork.  Below is the finished product over brown rice. 
I do have to say that I may have overdone the rub just a tiny bit... However, if served over brown rice, it did flavor it nicely!  I am always on the lookout for healthy recipes, and tilapia is fairly low in calories for protein.  Also, relatively inexpensive, this makes a great family dish that can be easily toned down by the omission or lessening of cayenne pepper for younger palates.  Happy cooking!

Stay Tuned!

I have a lot of projects in the works this week! My fiancé and I have decided to become more ecological with how we raise Zoey. Looking at the waste pile up for her has made us search out ways to cut back on all that waste! We are going to be switching slowly over to cloth diapering and cloth wipes. My goal for this week is to get our wipes cut and our wipe solution ready. We ordered our first 6 pack of sunbaby diapers with inserts as well as our wet bags.

This week's menu includes baked spicy tilapia over brown rice. Recipe with pictures Tuesday or Wednesday!

In the world of organization... Our master closet has exploded! I will show super embarrassing before photos... And hopefully beautiful after pictures!

Lastly in the craft world- I'm hoping to make a few quick/simple bows for my beautiful Zoey! Pics and tutorial to follow!
